About the position
We are offering a PhD position focused on the extraction and characterization of bioactive, antioxidant compounds to enhance the nutraceutical quality and stability of low-salt table olives stored at various temperatures.
Project Overview
This research aims to optimize advanced extraction and analytical techniques to monitor the efficacy of polyphenols and other bioactive molecules during storage. Analyses will be conducted at the Marine Biochemistry and Ecotoxicology Laboratories of the DiSTeM Department (University of Palermo, Trapani campus). The findings will provide innovative solutions to extend product shelf life, nutritional quality, and functional value, while reducing spoilage and waste to improve environmental sustainability.
Key Responsibilities
- Extract and characterize bioactive, antioxidant compounds from low-salt table olives.
- Optimize advanced extraction and analytical techniques to monitor polyphenol efficacy during storage.
- Conduct laboratory analyses at the Marine Biochemistry and Ecotoxicology Laboratories (DiSTeM Department, Trapani campus).
- Contribute to developing solutions that extend shelf life, nutritional quality, and functional value of the product.
Eligibility and Requirements
- Applicants must meet the standard eligibility criteria for PhD admission at Università degli Studi di Palermo.
- Background in chemistry, biochemistry, food science, or a related field is preferred.
