About the position

We are offering a PhD position in Food Science at Université Laval, Canada, to develop an integrated approach for characterizing the chemical exposome within animal food chains.

Project Overview

The exposome—the totality of environmental exposures an organism experiences throughout its life—is a major concern for human and animal health. With rising anthropogenic contaminants, new chemical substances, and climate change altering ecosystems and food chains, it is essential to better characterize complex contaminant mixtures. This project will use high-resolution mass spectrometry (HRMS) and non-targeted strategies to explore exposome complexity, detecting known and unknown compounds, identifying emerging contaminants, and studying cocktail effects from multiple exposures.

Key Objectives

  • Characterize livestock exposure to emerging contaminants and their mixtures.
  • Study the transfer and transformation of these contaminants within animal biological matrices.
  • Assess potential transfer to humans, particularly through food processing and thermal treatments (cooking).
  • Conduct a risk assessment of these complex exposures to understand their impacts on human and animal health.

Funding

Public/private funding from the Chair of the Ministry of Agriculture of Quebec.

Eligibility

  • Applicants must meet the admission requirements for the PhD in Food Science at Université Laval.
  • Proficiency in French or English is required; knowledge of French is an asset for working in a Quebec-based research environment.
