About the position

We are seeking a motivated PhD candidate to join a research project at the Libera Università di Bolzano. The research will focus on the valorization of food by-products through fermentation processes.

Research Activities

  • Microbiological, chemical, and nutritional characterization (including antinutrients) of selected by-products to assess their suitability as substrates for microbial growth and process reproducibility.
  • Selection of mixed starters based on fermentation kinetics, key enzymatic activities, and the production of nutritionally relevant functional compounds.
  • Definition of key parameters for solid and liquid state fermentation to enhance hydrolysis of complex carbohydrates and proteins, as well as the release of functional compounds.
  • Use of bioreactors for fermentation processes.
